This recipe for chicken and dumplings makes plenty for freezing.
Prep Time : 20min
Cook Time : 1hr 15min
Type of Prep : Bake, Boil
Cuisine : U.S. Regional
Occasion : Family Dinner

INGREDIENTS:

1 large, whole chicken
8 cups water
4 stalks celery, sliced
2 carrots, sliced
5 tablespoons flour
2 cups Bisquick baking mix
2/3 cup milk
PREPARATION:


Put chicken and 8 cups of water in large pan and boil until chicken is almost done, about an hour. Add celery and carrots; boil until soft.
When soft, fill an 8 ounce glass with hot water until it reaches about an inch an half below the rim. Add 5 tablespoons flour to the water and keep stirring. If it's not thick enough, add more of the flour. Then add this to the chicken and veggies; stir until thick.

Put in long pans; will take several. Make dumplings by mixing bisquick and milk until a soft dough forms. Drop the dumplings by spoonfuls over the chicken, then bake at 350 until the dumplings are brown.

Do not add dumplings to all pans, just one you will use for that night. Wait for other pans to cool then put in the freezer containers and freeze. Great for busy nights or if your feeling lazy just pull out, defrost, throw in dumplings and dinner is done!

-Isn't that made with hydrogenated soybean oil? puke
